Three Restaurant Reviews

I would have never heard of Ruth’s Chris except that I sometimes watch a local cable television show which highlights all of the area restaurants on its weekly program. They did a review of Ruth’s Chris steaks, and while practically drooling on camera, they described how the steaks are drizzled in butter and cooked in a 5000 degree oven that literally makes the butter sizzle all the way to the table. While I enjoy steak as much as the next person, I’m not that much of a steak fanatic. Given that I’m rather picky about having a quality cut of meat that’s cooked just so, and since I try to watch my calorie intake, more often than not I go for a salad or a nice salmon rather than a steak. The restaurant stuck in my mind however, because I was intrigued by their oven. 5000 degrees? I never knew such an oven existed! How do they even take the steak out? Fireman’s gloves? I’m not sure if pot holders would quite do the trick.

In New England, our nearest restaurant location is in Boston. For me, raised in the suburbs of New Hampshire, Boston is something of a logistical nightmare to navigate with its one-way streets, traffic jams, parking nightmares, and outrageous prices. I wanted a special birthday for the man I love, however, so I swallowed my resistance and we headed off on the hottest day of the year for an afternoon of a Boston Harbor cruise followed by dinner reservations at Ruth’s Chris Steak House inside Boston’s old City Hall.

Even though I take issue having to pay for parking in any way shape or form, it was a relief knowing a valet would be there to collect the car and free us from worry other than the inherent worry of handing over the keys of my sole means of transportation to a stranger who might pop the clutch or worse, pop a wheelie as soon as they round the corner out of sight.

For someone who enjoys history as much as I do, getting to eat dinner at a restaurant located inside such an historical building was a treat in and of itself. The entryway was romantically dim. Despite the fact that we had reservations right at 5:00 (when the restaurant opens) and the fact that there were no other patrons standing in the reception area other than the two of us, I was mildly annoyed that the two hostesses still found a way to make us wait there for a few minutes before someone finally ushered us down into the belly of the building where we were seated in one of the dining rooms. Since it was early, we had the room to ourselves. We were offered a wine list which we declined, and water and bread were served to us by not one but two attentive waiters who stood just outside the dining room throughout the entire dinner. It was comforting to know they were there to attend to our needs, but slightly unnerving that all they had nothing to do but stand there and watch us eat. Even though I think of myself as a princess, I’m not accustomed to actually being treated like royalty.

The menu is eclectic, including a variety of steaks, seafood, and chicken dishes. Salads are fresh, topped with dressings made at the restaurant, and desserts are heavenly, especially the homemade butter pecan ice cream and the bread pudding, which can be ordered as a combo. Service is attentive and polite without being obtrusive, and ordered items come at appropriately spaced intervals to allow you to finish the previous selection, whether it be an appetizer or a salad.

During the summer months, lunch and dinner can be eaten outside under a beautiful veranda that looks out over the Kanawha River and its falls. A popular site for weddings, it is always wise to call the Glen Ferris Inn for reservations.

Courgettes are produced in several colors, ranging from almost black to more subtle shades of green, and sometimes even creamy yellows. Many courgettes also possess subtle lateral stripes.

Courgettes are a member of the Italian squash family, and are generally grown in a stretched oval shape, but can also be grown in rotund and mixed shapes.

If you have a surplus of courgettes, you can freeze the excess, but because they are a soft squash, the most effective method is to roughly grate them, patting them dry with a paper towel and then placing them in a freezer bag before freezing.

What you need:

1 1/2 pounds Courgette (washed)
4 tablespoon Olive oil
1/4 teaspoon Hot red pepper
1/4 teaspoon Cumin
1/4 teaspoon Black pepper
Salt
4 tablespoon Italian parsley (chopped)

Dressing for Salad:

1 tablespoon Vinegar
3 tablespoon Olive oil

Description:

Clean the courgette and slice them into 1/4 inches thick.

Put the slices of courgette on a casserole.

Mix it with 2/3 cup of water, 4 tablespoon of Olive Oil, 1/4 teaspoon hot pepper, 1/4 teaspoon Black pepper and 1/4 teaspoon cumin.

Seasoned with salt.

Heat for five minutes or just until it is crispy.

Refrigerate and keep cold.

Drain the courgette when serving.

Create the dressing by mixing the vinegar and olive oil. Seasoned it with salt and pepper.

Add the dressing to the courgette, mix them well and serve it with parsley as garnish.

Serve immediately.

Learn About Thanksgiving Dinner Recipes

Food is the center of attention at Thanksgiving.  Hard work in a new world led to success and to this celebration.  The menu is usually the same.  Turkey, sometimes ham, mashed potatoes, stuffing, cranberry sauce, rolls or bread, pumpkin pie and apple pie, and a variety of other trimmings adorn the holiday table.  History aside, families also like to get everyone together in one room.  The food may be similar, but Thanksgiving dinner recipes have as much variety as the colors of the leaves on the November trees.

How about this Thanksgiving dinner recipe for a delicious appetizer? Move the pumpkin from dessert to the start of the meal as a savory Pumpkin soup. Heat a tablespoon each of oil and butter over medium heat. Add three sliced leeks (only the white) and saute until the leeks are soft. Add 15 ounces of pumpkin puree, a pinch of cloves, one tablespoon of ground cinnamon, one teaspoon of ground ginger, and a pinch of salt. Stir that until well mixed, then pour in 32 ounces of vegetable broth. Stir in one quarter cup of brown sugar. Bring it to a low boil then let it simmer for 10 minutes. If desired pour a tsp or so of cream or half and half into the bowl before adding soup and a dash of cinnamon. That sounds good.

For the main course try frying the turkey instead of broiling it. Don’t worry, fried turkey isn’t greasy. The oil is so hot it sears the skin, thus the oil can’t penetrate it. For this task a big oil pot and propane burner are used. Turkey fryers can be found in stores like Walmart. A meat thermometer is also needed, along with a deep fry thermometer to check the oil for the correct temperature. Make sure to fry outside in a clear area. Heat the oil to between 325 degrees and 350 degrees F. The turkey takes about three minutes per pound to fry to about 170 degrees F in the breast. It’s common to inject spices into the turkey during frying, but the dressing is usually not fried along with the turkey.

For some other Thanksgiving dinner recipes for soup, try curried pumpkin apple soup, butternut squash soup, or pumpkin and sausage soup. But there are other good appetizers for the meal. Try something different like cheese wrapped asparagus. Use two cheeses, one spread and one sliced. One idea is swiss cheese slices with a softer blue cheese spread. Spread the soft cheese on the slices, wrap it around a few asparagus spears, then cook in a 230 degree C oven for about 15 minutes, or until the asparagus is soft. Sure wrapping cheese around asparagus turns a pretty healthy food into something a little more fattening. But Thanksgiving isn’t a time for a diet. Live a little!

We are talking about desserts and please you’re in for a rude awakening if you think desert recipes is some kind of cake. And that doesn’t mean healthy alternatives to after dinner snacks either. If that’s what you expect, there is some confusion. The often sweet end to a meal is a dessert, while a desert is an often sandy and hot but always dry area. This article is about desert cooking.

Temperatures in the desert can top 150°F, that’s good for cooking. That heat can be used in the place of an oven, microwave or other modern cooking appliances. 

There are expensive solar cookers as well as homemade ones.  Such cookers can reach up to 300°F, perfect for many desert recipes, yes there is a great deal to desserts ! Everything from eggs stakes can be cooked on this.  But keep two things in mind.  The first is that this is a slow cooking method. That’s many hours needed to cook.  As the sun moves you’ll have to realign the cooker. And when the sun isn’t shining, on a cloudy day or at night, a solar cooker is no good.

But solar cooking has advantages that make desert recipes a tasty treat.  Slow cooking keeps food moist.  And it really isn’t possible to burn anything because there are hours of leeway in cooking times rather than minutes or even seconds with other cooking methods.  Have your doubts? Try rice on the stove for an extra minute. Also longer meal preparation time means more time to look forward to that great meal.  Food tastes better when some care is taken in the preparation. And don’t worry about food not browning in a solar cooker. If there’s some fat, the meat will brown.

Just for starters, our lesson for today is identifying that your favorite restaurant needs to clean their carpet. Pick a restaurant that you would like to go and enjoy a meal, that is a easy one.

Second, arrive at the restaurant of your choice; this next step is the most important one.

Third, when you open the door take a deep breath, what do you smell? I suggest you go to another restaurant, if you do not smell food coming from the entrance. Now the reason I said that, you should smell food, I think that is fare to say it is a restaurant. If you opened the door and smell smoke from cigarettes, maybe you should suggest they should install a smoke eater to filter the air you breathe. The most common reason for the funky dog smell is the use of a dirty mop to clean the front entrance. The most common problem is soured or mildewed carpet. Odor is caused by the carpet being wet to long after the carpet has been cleaned giving that wet dog smell. This smell is actually mold spores growing in the carpet.

This is the restaurant’s problem for the poor cleaning they receive, I have seen the managers trying to hide this problem they spray deodorizers around the restaurant. Some even put those little plug in deodorizers in the walls, just look around, be nosey at what you favorite place to dine is doing.

I guess this is a plea for help for the professional carpet cleaners who invest time, money, training, into their business. These restaurants try to sacrifice your health to save money by using a cheaper cleaning company, I do not think so. Do not be embarrassed to tell them the truth that they have cleaning issues, remember you are PAYING THEM.

Have you ever wondered how clean the carpet is in the restaurants where you eat? It makes you wonder how often they need to clean their carpets. You just need to think about how many people travel across those floors in a day and all the servers walking back and forth spilling drinks as they fill your glass. I know what you may be thinking… this all depends on how much business they have. I have been a commercial carpet cleaner for fourteen years, and believe me I know.

Let’s compare your house against restaurants, easy enough. The carpet manufacturers say you should clean your carpet in your house every six months for your health. Wow! I bet you that was a big shock. Ok, that gives us a number to work with. Say you have four people living in your home that leave and come back five times a day. This equals twenty people a day entering your doorway. Now times that by thirty (now I’m testing your math skills). This is equaled to six hundred people walking through you door a month. That is three thousand six hundred people in six months walking in your door.

Now let’s compare this to a restaurant, say a homestyle buffet, I know you have been to one of these. They have a average of four thousand people a week. We will do the math, which comes to about five hundred seventy two people a day. This leads me to believe that restaurants should clean their carpet every week, and not the standard once a month. That is right, most restaurants clean ONCE A MONTH for your health. Remember to keep that in mind the next time you eat at your favorite restaurant.

Meal structures in Italian cuisine includes the aperitivo which serves as the appetizer before the large meal or antipasto which are also appetizers that can be hot or cold. Primo is the first course offered which is usually the most filling meal. Primo dishes would include pasta, risotto or polenta.

The seconda (second course) is the main dish. It is traditionally pork and chicken. Fish prepared are those which are caught locally. The contorno is the side dish that may be a salad or cooked vegetables.

Dessert may be formaggio e frutta (cheese and fruits) or dolce (cakes and cookies). Coffee is also offered in every meal. While digestive or liqueur is also offered after the meal.

For travellers and locals alike that would like to dine out, each establishment has a defined role and they traditionally sticks to it. These are the following cuisine establishments common in Italy:

Agriturismo - Working farms that often offer accommodations and meals. Bar/Caffé - Locations which serve coffee, soft drinks, juice and alcohol. Hours are from 6am to 10pm.

Birreria - A bar that offers beer found in central and northern regions of Italy.

Frasca/Locanda - Friulian wine producers that often open for the evening and many stay open late offering foodalong with their wines.

Osteria - Focused on simple cuisine of the local region, usually only having a verbal menu.

Paninoteca - Sandwich specialty shop open during the day.

Pizzeria - Wood fired pizzas are a specialty of Italy.

Polentaria - A regional establishment seen in limited number in the northern part of Italy above Emilia-Romagna.

Ristorante - Often offers upscale cuisine and printed menus.

Spaghetteria - Originating in Napoli, offering pasta dishes and other main courses.

Tavola Calda - Literally “hot table”, offers pre-made regional dishes ordered from a queue, often served on a tray.

Trattoria - A dining establishment often family run with inexpensive prices and an informal atmosphere.
