Choosing a wine to go with a festive holiday meal can be a challenge. A bold, celebratory wine seems a good initial choice - but it risks clashing with, or possibly even overshadowing, any of the delicious food cooked for the occasion. But too fruity or light, and the traditional holiday meats might make the wine seem bland in comparison. And, or course, holidays bring together family and friends from all over, and the wine needs to appeal to this diverse group of people. Here, therefore, are some ideas to get you started, along with some specific recommendations, so that the holiday bottle becomes a gift to share, not another source of stress.

Traditional Thanksgiving wines are many. A Sauvignon Blanc is crisp and earthy - a perfect pairing with a herb-encrusted turkey or herb-based stuffing dish. The warm, natural tastes of this particular wine could be the perfect complement. You might try the Beringer Vineyards, Napa Valley, 2004 - these zingy, fruity wines have a great earthy taste. Or, incorporate the grass notes of the $15 Ferrari-Carano from Sonoma County, for a rosemary-based dish. Riesling is another option, good with spicy dishes. A recommendation here is the $18 Pikes Clare Valley Riesling.

The problem, of course, is that one wine for spicy sides and one for the main dish isn’t really ideal. This isn’t a traditional three-course meal, usually, but a family-style extravaganza. But for red wines - traditionally heartier, and better for these wintry months - the Pinot Noir is simple and tasty enough to go with everything. Simple, homey, and sure to please - the perfect family Thanksgiving combination. If you’re feeling more adventurous, however, you might try Beujolais Nouveau. This fruity wine goes wonderfully with turkey - and best of all, it’s perfectly seasonal; it’s always released on the third Thursday in November! For your dessert - if it’s pumpkin pie - bring out a cream sherry; they’re sweet enough to stand up to the spicy confidence of the pie.

For Christmas dinner, a different wine might be an interesting way of making a traditional Christmas meal seem more special. Try serving a nice Zinfandel with the Christmas ham, or a Shiraz with the turkey. Since it’s winter, you’d probably be better off staying with red wines.  With lighter meals - hams or other cold meats - you might try the Chianti Classico 2001 Borgo Salcetino, an Italian wine that can be had for under $15. Its tannin taste complements the oiliness of ham well. For a fat bird like duck or goose, the velvet Chassagne-Montmrachet Rouge, Blain-Gagnard, is a rich Burgundy that will bring out the meat’s richness. For a beef or lamb dish, try a Bordeaux (such as the 1998 Les Pagodes de Cos, St-Estephe, just over $20, an elegant, decadent bottle). Don’t forget to finish off with a good bottle of port!

One more consideration about wine and holiday feasts - you may well receive a bottle or two of wine from your dinner guests. You shouldn’t feel obligated to serve it at all, unless it really is a special wine that goes well, and that you want to share. Otherwise, save it for another time – it’s a gift for you, after all. And, don’t forget to store it properly, in a wine cooler or wine chiller, so that you can enjoy it when you finally do uncork it, for another special occasion. Even a wine cooler that will hold just 12 bottles will do, but you’ll likely find that you’ll fill that up very quickly, so take expansion into consideration. The impact of the first Spanish settlers on the California wine industry is huge. A vineyard was always part of the building of a California mission village during the 18th century. Get the Most from your Wine

Deciding on the best way to let your wine breathe can be a difficult one.I am ready to start enjoying my glass of wine right away when I open a bottle. I generally don’t have much patience for allowing it to breathe.  Why do we let wine breathe?  By letting your wine breathe or aerate it allows for the full flavors to emerge and make the wine more palatable. While there are many wines that do not need to go through this process, it is good to know the little details that can make a big difference. Here are a few tips to help you enjoy your wine to its fullest potential.

The reason why wines needs to breathe, or age, is because of tannins. Tannins can transfer into wine during the fermentation process from seeds and skins of grapes. They are a natural preservative that diminish overtime allowing fuller flavors to emerge. White wines and some red wines have low levels of these and therefore do not need aging, or periods of breathing, before drinking. Generally all red wines can benefit from aeration, but those that are lighter and fruitier generally don’t require much aeration.

The term breathing refers to the mixing of oxygen with wine allowing the breakdown of tannins. When you use a decanter your are allowing the wine to mix with oxygen, allowing fuller flavors engulf your taste buds.

If you choose to allow your wine to breathe, you still have one more decision to make. Which is a better option for me, the decanter or an aerator? If you have at least an hour to let your wine breathe, then go ahead and use your decanter. This is plenty of time for your wine to mix with oxygen and for its full flavors to emerge.  All you do is pour your bottle of wine, or the ammount you would like to drink, into the decanter and let it sit.Surface area is key to the amount of oxygen that can reach the wine; the more area, the sooner you can enjoy it.

If you just opened a bottle of wine five minutes before guests arrived, or you are only wanting to drink a single glass, decantors may not be the best way to aerate your wine.An aerator achieves the same end result as a decanter but in a fraction of the time. There are two types, one that you hold over your glass as you pour or ones that you place directly into the bottle and acts as a wine pourer.

Don’t sacrifice your working conditions to be clever, however as your staff must be motivated and happy and able to do this job successfully to give you that special “something.”

Training is an important element of people management. Do they all have the same vision as you with regard to the future of the business? This is crucial and training is one of your requisite restaurant skills, together with adequate internal communication.

Marketing is a close second to people management when it comes to potential success. You can have a fantastic menu with a great-looking presentation, but if your restaurant skills do not include marketing, you will be sunk. Direct advertising used to be the only way to go, but now social marketing and media are rising very quickly.

Don’t expect to be a hundred percent proficient with all your restaurant skills when the business opens, but the fundamentals must be in place. As with anything else, you will learn as you grow.

A restaurant is not a static object, it is a living and breathing thing and you must keep up with all your industry developments to help you move forward. With a lot of internal strength and a positive approach and commitment, you will be one of those who succeeds.

Egg Salad Surprises

Everybody loves eggs. We commonly meet them at breakfast table either scrambled or fried. However, these are actually tasty salad staples as well. Egg salad recipes are probably one of the easiest salads to make. Not only can it be served as is, but it can also be used as a sandwich filling. Below you will find recipes compiled from different sources. You may want to try one or two at home. Don't worry if you don't get to finish them, these salads can still make it to tomorrows sandwich. Now, enough said. Gab your things and let’s start whisking.

CHUNKY EGG SALAD
serves 4

1/4 cup mayonnaise
1 Tablespoon cider vinegar
1 teaspoon salt
1/4 cup minced onion
1/2 teaspoon Worchestershire sauce or
1 teaspoon of prepared mustard
1/4 teaspoon ground white pepper
6 hard-cooked eggs
1 cup thin sliced celery
2 Tablespoons minced green pepper or red or green hamburger relish
sliced tomatoes or whole tomato
parsley for garnish

In a medium bowl, stir mayonnaise and next five ingredients until well mixed. Cut eggs into chunks or dice, as you prefer. Add eggs, celery, add green pepper or relish to mayonnaise mixture. Mix well. Cover and refrigerate till well chilled.

To Serve: Spoon mixture on tomato slices or into whole tomato. If using whole tomato, either cut off top and spoon out some of the middle, set on shredded lettuce and loosely fill with egg salad, or cut tomato into 8 wedges but do not cut all the way down, so that the tomato wedges will stay connected.

Garden Egg Salad Bowl
Makes 4 servings

6 tbsp. mayonnaise
1 tsp. prepared mustard
1/4 tsp. lemon pepper seasoning
1/8 tsp. salt
1/2 cup frozen peas, thawed
1/2 cup thinly sliced cauliflower
1/2 cup sliced mushrooms
1/2 cup diced celery
1/2 cup quartered and sliced zucchini
2 tsp. dried chives
3 hard boiled eggs, coarsely chopped
Spinach leaves
Paprika
4 oz. cut julienne Swiss cheese
Tomato wedges
Pimiento-stuffed olives

How Does Absinthe Effect Physically ?

Most of the people want to know whether Absinthe has any effect on the body and also about the physical effects of Absinthe? Absinthe was unauthorized during 1900s and was illegal for decades so various people not even know the taste of it.

Absinthe is an anise flavored distilled alcoholic drink produced from a wine base and flavored with herbs. Common wormwood (Artemisia Absinthium), aniseed and fennel are the three main herbs used in Absinthe distillation.

During 18th century Absinthe was created in Couvet, Switzerland by a doctor. Herbs renowned for their medicinal properties were used in it’s preparation. Henri-Louis Pernod managed to get hold of the recipe and began the production of Absinthe in Couvet and then in Pontarlier, France.

During 1840s Absinthe was used by French soldiers to cure malaria. It soon became popular in France and even took over from wine as the favorite drink of the French in the late 19th and early 20th centuries. All over France and in various countries Absinthe became very famous.

Absinthe was served with apparel such as a special Absinthe glass, a slotted Absinthe spoon and an Absinthe fountain or carafe of iced water. After diluting it with a sugar and water solution it was served.

“Sweat” magazine “Battle Cry” contains an article related to Absinthism, a “disease” caused by prolonged Absinthe drinking. Doctors claimed that it was far worse than normal alcoholism and had the following symptoms:-

Initial Symptoms after consuming Absinthe:-

- A feeling of exhilaration
- Hallucinations
- Having restless nights with terrible bad dreams
- There can be problems of nausea and vomiting
- Trembling
- Dizziness

Symptoms of long term Absinthe abuse:-

- Frothing and convulsions
- Delirium
- There can be hypersensitivity to pain
- Loss of libido
- Absinthe is responsible for the sensitivity to hot and cold
- Insanity
- Paralysis
- Death

The French Academy of Medicine asked that Absinthe be forbidden in 1900 but their pleas were ignored. It took the murder of a family by an Absinthe drinker in Switzerland in 1905 for governments to act. In 1908 Absinthe was restricted in Switzerland, in 1913 in Italy and in 1915 in France.

Absinthe’s physical effects were thought to be due to thujone in it. People thought about thujone that it was a psychoactive, a neurotoxin and also active on the GABA receptors in the brain. People had compared it with THC in the drug cannabis.

However, recent research with traditional pre ban Absinthe recipesand gas chromatography  tests on vintage bottles of original Absinthe have all shown that, contrary to belief, Absinthe only contained a maximum of 6mg of thujone rather than 350mg which is what people believed it contained. This quantity of thujone was far from a harmful level.

Many now believe that Absinthe was unfairly blamed and that Absintheis no more dangerous than any other strong liquor. It should be consumed with care and in moderation though because it has a high ABV (alcohol by volume), twice as strong as other spirits like whisky and vodka.
