Do whatever you like, within reason, but when you wish to know how to make bruschetta, begin with a slice of bread, rub it with garlic, fry it in olve oil, spread on chopped tomatoes as it really is frying - that’s the only way to make bruschetta.

It’s that time of the year when spring is but a few weeks away and for most of us that can only mean one thing - time to tidy up.

 

A couple of weekends ago the sun was shining and so unfortunately this made my house look a little bit shabby and I could see a covering of dust that had no right being there. Because of this I decided that in my house spring had arrived early and it was definitely time to start the cleaning.

 

The day began with me full of plans to give the house a good old clean from top to bottom. First on my list was the kitchen, which actually took a little longer than I thought it would, so already I was fading fast. However I ploughed on and next on the list of rooms to tidy up was our Utility room. This is one of those rooms in our house that we seem to dump everything and then just pull the door shut.   I hadn’t been working long when I stumbled across a load of cheap books that my mum had given to me.   This set me off and thinking about my mum and the clearing out came to an abrupt halt.

 

My mum was a real book addict and she was always happiest when she had a cup of tea in one hand and a book in the other.   She didn’t really mind what she read it could be anything ranging from fiction books, romance books and she even owned a few cook books. It’s still a mystery why she had cook books, because from my knowledge she was never really that experimental with her cooking.   Perhaps she just enjoyed looking at all the pictures!

 

It was funny but I can remember a holiday we went on to Lanzarote.   In my suitcase I had packed all the usual, towels, bikinis, sun tan lotion etc. I was flabbergasted because when mum unpacked her case it was full up with loads of books. Without a lie I think she had nearly a dozen with her. I thought this was really funny as we were only staying at the villa for 2 weeks. Mind you I will admit she came home with a fantastic suntan because she had spent her entire holiday sunbathing around the pool with a book in one hand and a glass of wine in the other.

 

Well my spring cleaning didn’t really go as well as I had hoped, but you know what it’s like sometimes you get sidetracked and I must admit when there is cleaning involved, any excuse to stop is always welcome.

The menu is very extensive. Appetizers are many and they all sound very good. There is the regular antipasto salad or try some bruchetta or the smoked salmon. There is traditional calamari served with a marinara sauce or try the Caprese salad, a peasant dish of sliced tomatoes, fresh mozzarella and basil. Soups are made every day from what can be procured from the market and a bowl will cost you around 7. 50 and a cup 6 dollars. The Anidiamo salad is a restaurant favorite and is made up of greens, grilled eggplant, roasted red pepper and Gorgonzola served with a dressing of vinaigrette and costs about 7 dollars.

Entrees include fish of the day or chicken piccata, Marsala, or Parmigiana. Veal can also be provided instead of chicken and these dishes cost around 19 dollars. You can get a Fillet or lamb dish at the market price of the day. The menu boasts many different pasta dishes but the one that gets the most attention is the unusual combination of pears and Gorgonzola cheese in a ravioli that is served in a sauce of Gorgonzola and walnut. You can get any other pasta you can think of here including vegetarian pastas. They also serve all types of sauce and some you have never heard of before. There is also pasta made with seafood and different combinations of risotto. Prices are great for what you get at Andiamo’s.

Firenzi Ristorante may give Andiamo’s a little quality competition. Firenzi opened its doors in 1992 and have made friends with many Bellevue residents for many years. The walls are stucco that reflect the candles on the tables and the terracotta floor looks like you just stepped into an Italian villa. The owner and staff are extremely friendly and will make sure you are treated right.

The menu starts with a variety of appetizers including prosciutto with cheese and olives, or a traditional and tasty bruschetta. You can get calamari here but it is different as it is served with peas in a sauce made of tomatoes. Salads are many as well including a regular romaine salad that is topped off with tomatoes and mushrooms. You will pay anywhere between 7 to 16 dollars for an appetizer.

The pasta offerings are abundant and include all types of pastas that are smothered in many different sauces such as Alfredo, claim, Pesto, tomato, wine sauce, or mushroom sauce and cost around 14 to 25 dollars. This restaurant also has chicken that is stuffed with cheese and ham in a cream or a wine sauce. They have the regular Marsla, Pizzaiola, and Piccata on the menu too. There is lamb, sausage dishes, quail and a multitude of seafood dishes. The entrees run from 14 to 25 dollars. If you have a sweet tooth you can find desserts at this restaurant that will tickle your tongue. Find Firenzi Ristorante near Bellevue square and visit them at lunch or at dinner time.

Bellevue is the home of other Italian eateries as well. Some are very small and there are a few chain restaurants that serve Italian fare as well. The two listed above are some of the best in town. They bring Italy home to Bellevue.

Preparation Of Foods: Dairy Produce.

Eggs: Part II

Poaching: boil 40mm water in a frying pan; add a teaspoon of salt and a teaspoon of vinegar. Crack egg into cup, inspect and tip into water. Turn down the heat. Gather the white around the unbroken yolk with a spoon and simmer for 3-4 mins. Lift out with a fish slice, drain and serve on hot buttered toast.

Scrambling: beat the eggs well; add salt, pepper to taste and a dash of milk. Melt enough butter to cover the bottom of a shallow pan. Heat the eggs slowly, stirring continuously. Cook in a basin floating on boiling water, if you’d rather. Serve when nearly completely set, in about 5 minutes.

Frying: Melt enough fat to easily cover the base of the pan. Tip egg in gently and gather white around the yolk. When the white has set, baste the yolk to taste and remove whole with a fish slice.

Baking: lightly grease a fireproof dish and slide eggs into it. Sprinkle with salt, pepper and butter. Bake in a moderate oven and serve in the same pan after the whites have set.

Omelette: buy a pan and keep it only for omelettes! The base should be smooth and clean. Allow two eggs per person; beat lightly and add salt and pepper to taste. Heat enough butter to cover the base of the pan. When the fat is hot, pour in the eggs; as it sets, raise the handle up and draw set mixture up, allowing the liquid egg to run down onto the hot pan. When all is set, tilt the pan forward and roll the omelette over. Serve immediately on a hot plate. It can be filled with almost anything, before being rolled over.

Pouring Custard: beat 2-3 eggs for every one pint of milk lightly. Heat the milk and pour gradually over the eggs; add sugar and flavouring to taste; cook in a double pan or jug and hot water until the required thickness has been achieved. If it is not to be served immediately, pour a thin layer of water onto it to stop a skin forming.

Baked Custard: begin as above but then transfer the custard into a lightly greased shallow dish; sprinkle sparsely with nutmeg and place the dish in water to halfway up its sides. Bake at 350 F for 35-45 minutes; you can test its solidity by inserting a knife, which should be clean on removal.

Steamed Custard: as above, but cook in a steamer or pan of boiling water. The cooking time is about the same too.

Custard Tarts: pour pouring custard into unbaked pastry cases and bake in the oven for 40-50 minutes. A little jam can be placed in the bottom of the pastry case first, if preferred.

Crescent Pie Recipe of Beef & Cheese

You will need

2 cups of shredded cheddar cheese
600 grams of ground beef
1 cup of refrigerated rolls
1 cup of tomato sauce
1 paprika
1/4 teaspoon of garlic salt
1/4 teaspoon of salt
1 slightly beaten egg
1/3 cup of green pepper (chopped)
1 cup of green beans (drained)
1/3 cup onion (chopped)

Instructions

Set the oven at 190 degree C.

Cook the beef until brown in a large frying pan with green pepper and onion, and then drain.

Include beans, tomato sauce, salt and garlic salt, and then mix. Allow to simmer as the crust is prepared.

Cut crescent dough to eight triangular shapes.

Put the triangles in a 9-inch ungreased pie pan, and then form crust by pressing over the bottom and up sides.

Add and spread the slightly beaten egg and 1 cup of cheese on the crust.

Using a spoon, insert the hot mixture of meat into the crust.

Use the rest of cheese and paprika to sprinkle over.

Place in the preheated oven until golden brown for 20 to 25 minutes.

Serves 5
