One of the quickest, easiest, and most economical ways to feed your family and/or friends, is to serve a delicious soup. Soups are perfect with or without meat and they are versatile enough to serve as a snack, an appetizer, or a light lunch with a sandwich or salad. On a busy weeknight, soup makes a good dinner option. Serve with cornbread or a rustic crusty bread, a relish tray or a tray of meat and cheeses. You can add a simple dessert for a complete meal. For those who like a meaty soup, try this recipe for Chicken Soup with Wild Rice and Spinach. For the vegetable lovers, try this recipe for Spring Creamy Vegetable Rice Soup.

I’m leaving at least two dozen vegetarian cookbooks. My daughters could easily use those or lend them to my son. They could certainly do an Internet search and find oodles of options for vegetable soups. But I rarely use published recipes. I invent my own soups, from whatever is available.

IN A HURRY MEATBALL-PASTA SOUP

1 cup uncooked whole-wheat spiral pasta
1 lb frozen Italian meatballs, thawed
2 cans (14 1/2 oz each) chicken broth
1 can (28 oz) diced tomatoes, undrained
1 1/2 cups frozen sliced carrots, thawed
1 can (16 oz) kidney beans, rinsed and drained
1 jar (14 oz) meatless spaghetti sauce
1 jar (4 1/2 oz) sliced mushrooms, drained
1 cup frozen peas.

SPRING CREAMY VEGETABLE RICE SOUP

3 tbsp butter
3 leeks, chopped
1 small onion, chopped
1/2 cup regular long grain rice
1 1/2 tsp salt
8 cups water
3 medium potatoes, thinly sliced
1 medium carrot, thinly sliced
12 stalks fresh asparagus, cut into 1-inch pieces
1 bag (10-oz) fresh spinach, chopped fine
2 tsp salt
dash freshly ground black pepper
1 cup heavy cream.

Stock up on dried beans, lentils and grains– such as brown rice and whole-grain pastas, and barley, some cans of tomatoes. By adding any vegetables (celery, carrots, onion, mushrooms, broccoli, or other favorites), many vegetarian soup recipes can be created.

In a saucepan, cook cabbage, water, and onion with caraway seeds in melted butter until tender, about 10 minutes. Add soup and pepper. Mix well. Pour cabbage mixture into electric blender or food processor and blend until smooth. Return the mixture to the saucepan and gradually add in milk. Heat and stir occasionally. Thin to desired consistency by adding more milk if desired. Garnish with fresh parsley.

Located at the junction of US 60 and SR 16 on the Kanawha River, Gauley Bridge is a picture postcard in real life. Situated in the mountains, this small city is an open treasure chest for history buffs.

The day we went to have lunch, we were seated right away, probably because of the time which was around 2:30 pm. I liked the atmosphere right way because of the bright colors, movie memorabilia, structural design and lighting. Our waitress was friendly and seemed experienced.

Even though I take issue having to pay for parking in any way shape or form, it was a relief knowing a valet would be there to collect the car and free us from worry other than the inherent worry of handing over the keys of my sole means of transportation to a stranger who might pop the clutch or worse, pop a wheelie as soon as they round the corner out of sight.

Since we were hungry we decided to try two appetizers: the blackened shrimp and the Parmesan spinach dip with chips. I thought the blackened shrimp were excellent, but was disappointed in the dip which seemed too rich for my taste.

The menu is eclectic, including a variety of steaks, seafood, and chicken dishes. Salads are fresh, topped with dressings made at the restaurant, and desserts are heavenly, especially the homemade butter pecan ice cream and the bread pudding, which can be ordered as a combo. Service is attentive and polite without being obtrusive, and ordered items come at appropriately spaced intervals to allow you to finish the previous selection, whether it be an appetizer or a salad.

Before our steaks arrived, I remember making note of the flatware on the table, and how the only knives we were provided were suitable for spreading butter and not necessarily for cutting into a steak. My birthday boy only smiled at me and replied that I wouldn’t need a steak knife. He was right.

Introduction

Directions

In a small mixing bowl, combine steak sauce, orange zest, sugar, salt, and red pepper.

Next, spray your broiler rack with your nonstick vegetable spray. Rinse your steaks, pat to dry, and place onto broiler rack.

Apply about two tablespoons of orange dream sauce onto steaks and spread evenly. Allow to stand for 15 to 20 minutes.

Preheat your broiler. Broil your marinated steaks for about 3 minutes. Flip, and then spread remaining orange dream sauce over your steaks. Re-insert steaks into broiler for another additional 6 minutes or until your desired done ness has been reached.

Conclusion

I love soups and could eat them everyday. But I don't always have the time to make a big pot of soup that simmers for hours. I have found some soups that can be made in minutes or without a lot of work. If you are in the mood for soup but have a limited amount of time, try these recipes. Cheese-Bean Chowder does not have meat so for the meat lovers out there, go with the Brat-Cheese Soup.

CHEESE-BEAN CHOWDER

3 (15-oz each) cans navy beans*, drained
2 cups water
1 med onion, chopped
1 stalk celery, chopped
2 tsp instant beef bouillon granules
1/2 tsp dried basil, crushed
1 bay leaf
2 cups milk
1 jar (8-oz) pasteurized process cheese spread
minced fresh parsley for garnish, optional

In a large saucepan or a Dutch oven, combine drained beans, water, onion, celery, bouillon granules, basil and bay leaf. Bring to boiling. Reduce heat and simmer, covered, for 20 minutes. Discard bay leaf. Mash beans slightly with a fork. Stir in milk and process cheese spread. Cook and stir until process cheese spread melts and the soup is heated through. Ladle into soup bowls and garnish with the parsley, if desired.

*Pinto beans work just as well–your preference.

Put the tomato blend back into the pot. Add the ingredients in List 3 to the tomato blend. Stir to make it smooth and even. Turn heat on to bring it to a simmer.

In a second pan, make your white sauce from the ingredients in List 2. When it has thickened sufficiently, allow it to cool while waiting for the tomatoes to simmer.

When the tomato blend is simmering, add the white sauce mixture to the tomato blend. If you use real milk, you may want to add some of the tomato blend into the white sauce first to have less chance
of it curdling. If it does begin to curdle, use a wire whip to blend it quickly. You must stir constantly while adding the white sauce to avoid lumps.

In a medium saucepan, combine thawed vegetables and diced onion. In a small bowl, combine flour, Italian herb blend, salt and pepper, stirring well to mix. Add flour mixture to vegetables and stir to coat well. Dissolve bouillon granules in water and milk; add to saucepan, and bring to a boil. Cook, stirring constantly, 5 minutes or until mixture is thickened and bubbly. Reduce heat to low and add cheese and mustard, stirring to blend. Serve immediately.
6 servings of 1 cup each. Per serving: 80 calories, 12 g carbs, 5 g protein

The Cold Water Trick

Do not have oil to use, or cannot use it? Then try using the cold water trick when cooking Italian pasta. What you do is boil your pasta as usual. Then rinse it thoroughly with cold water. This is can be tricky if you are making pasta as a main dish and want it hot. But what you are doing is rinsing the starch off the noodles so that you can easily separate them without breaking them.

This is a very reliable method in pasta cooking for spaghetti and lasagna. These pasta dishes are heated with sauces and other ingredients so the rinsing does not usually affect them. You do not need to rinse the noodles too thoroughly. A quick rinse and stir with your hand in the colander usually does the trick and is enough to get the starch’s sticky nature off the noodles. Most times this will only cool your pasta a bit and not make it too cold.

One of my many favorite places to eat in Rangoon, Burma is at an excellent Burmese fresh salad bar on the street right next to Sule Pagoda. It opens in the evenings as the parking spaces empty, spilling off the sidewalk and across the street.

This place is famous in Burma for the best hand-tossed rice salad in Rangoon and probably the world. It is the Golden Hand Tossed Salad Bar.

The Dressing
If you’ve never made a pan vinaigrette you are in for a treat. The yum factor rests in the bottom of the pan after sautéing and is released when you add vinegar and maybe a little oil or stock.

Servings
Recipes make 2 entrees but can easily be double or tripled for company

Warm Spinach Salad with Grilled Sea Scallops Sauteed Tomatoes and Mushrooms

5 Cups Fresh Spinach leaves
1 Cup of thin sliced button or cremini mushrooms.

Well, because I did not know any better and because I truly did want to get those horrible extra pounds off, I did end up eating many boring naked (dressing free) salads and I did lose weight…however I do not recommend that you lose weight that way. It is a recipe for failure.

Heat your grill and cook the fish. Allow about 8 minutes to finish your salad ingredients and have the plate ready for the fish.

When the fish is almost done, place the bread slices down on a cooler part of the grill. It takes only about 2 minutes to add a nice grilled flavor to the bread.

Over the years I learned that you can make your salad healthy and taste good at the same time.

All you have to do is add delicious healthy salad dressing to the vegetables and fruits in your salad. It is not hard to do. There are many healthy salad dressings you can easily make at home in 2-3 minutes, really! And they taste so yummy!.

When I first tried Burmese salads I was simply taken with the freshness and the flavor of them. As I learned more about how healthy traditional diets are I began to realize how sophisticated these salads are. Salads from all over Myanmar contain either sesame seeds or peanuts, both of which are a good protein complement for rice. They also contain high amounts of good quality fat and calcium. Infusing oil (usually peanut oil) with turmeric and garlic and having it on hand to use in the dressings, adds powerful anti-oxidants and anti-microbial powers to the salads. Some salads include tiny, pink, dried shrimp, which are very high in protein and nutrients needed for growth and reproduction.

The Burmese only use the freshest of ingredients and toss them lightly together at the last possible minute with the quick touch of the chef. The finale is the flourish of the hand as the salad is laid down before you.
