You can have delicious unique salad dressings at a fraction of the cost of the store-bought kind. You don’t have to be some kind of cooking genius, either. All it takes is a basic recipe and a willingness to experiment.

Start by saving a couple of empty bottles of purchased dressings. Glass is better but plastic will work too. Wash them well, soaking them for a while to take the labels off and to get them totally clean. Measure how much they will hold. It may be about a pint, or it might be more. Optionally, you can use any glass jar you have, but put some water in it, shake it up, and turn it upside down to be sure it won’t leak when you shake up the dressing.

So, finally, what is the recipe? Well, it depends. Often 2 parts olive oil to 1 part vinegar is a good blend, but you may also like 2 parts olive oil to 1 part vinegar and 1 part water. In other words, if you were making a pint (two cups) of salad dressing, you could use 1 1/3 cups of olive oil to 2/3 cups of vinegar to create the first ratio. For the second one, you would use 1 cup of olive oil, 1/2 cup of vinegar, and 1/2 cup of water.

Start with 1/4 teaspoon of salt per pint of dressing, and increase it to taste. As for other spices, of course black pepper is typically used, but hot cayenne pepper, the milder paprika, and anything else on your shelf can be tried. Dried mixed herbs do well, so long as you give them enough time in the dressing before using it for the first time.

Find a good basic dressing that becomes a standard, and you will be able to make it rapidly. Then when you feel like it, experiment. Lemon juice can be a good substitute for vinegar, but it’s so strong that you may want a smaller amount of lemon juice than you would of vinegar. Leftover wine can replace water. Peanut butter can be added, as can yogurt. Use a blender if you wish.

Once you start making your own salad dressings, the flavor combinations are endless. If the olive oil solidifies when you keep the salad dressing in your refrigerator door, just pull out the dressing before you cook a meal, or keep the dressing at room temperature if you are going to use it up fairly soon you can be published without charge. 2 lbs carrots, sliced
1 large onion, chopped
1 cup green bell pepper, chopped
1 can tomato soup
1 tbsp Worcestershire sauce
1 tsp prepared mustard
1 cup sugar
1/2 cup salad oil
1/4 cup vinegar

Cook carrots in salted water until tender. Cool. Mix carrots, onion, and green bell pepper together.

To make the dressing, whip the tomato soup, Worcestershire sauce, mustard, sugar, oil, and vinegar together to blend. Pour over the vegetables. Refrigerate overnight. Do not stir.

VIRGINIA’S DEVILED EGGS
This recipe is from an old Monroe County, Indiana church cookbook.

6 hard boiled eggs
1/4 cup mayonnaise
1 tsp vinegar
1 tsp prepared mustard
1/8 tsp salt
dash of pepper
paprika for garnish

Cut eggs in half lengthwise; remove the yolks to a small mixing bowl and mash with a fork. Blend the mayonnaise, vinegar, mustard, salt, and pepper into the mashed eggs. Mix until well blended. Refill the egg whites with the mixture. Sprinkle paprika on top for garnish

Salads - Make Your Own Salad Dressings

Eat green and stay healthy and lean, that’s my motto. I’ve always loved healthy salads. Ever since my late father’s medical condition precluded his enjoying the greens he also loved, I’ve never taken them for granted and enjoy them even more. My favorite salad mainstays come from Earthbound Farm that began 25-years ago as an organic backyard garden in Carmel Valley, California. Now I live just a few miles away in Carmel, long committed to organic for me and the planet. There is nothing like Fall with the aroma of fresh apples in the air as you pick your own in the local apple orchard. My favorite thing to do with my grandchildren is apple picking and then going home and making some of the delicious recipes from those fresh picked apples. Some of our favorite recipes include apple pie, apple crisp, apple butter, applesauce, baked apples, candied apples, apple bars, apple cake and this wonderful Apple Taffy Salad.

SERVINGS: 10-12

Cut the pears into fourths length-wise and core. Place in a baking dish. Combine the apple juice and brown sugar and pour over the paces. Bake 20-30 minutes until they are tender, basting occasionally with the juice. Remove to a plate and reserve ¼ cup of the juice mixture.

Cover and refrigerate.

Fold whipped topping into the chilled dressing. Add the apples and peanuts to the pineapple and marshmallows. Fold dressing into fruit mixture. Refrigerate leftovers

For a simple dessert, try serving this salad in mini graham cracker tart shells or you could try preparing the fruit salad without the yogurt and instead layer the fruit and the yogurt in alternating layers in parfait glasses.

Another simple presentation is to serve the fruit salad over a bed of sliced strawberries or salad greens with warm rolls on the side for a light and quick meal

The following are a number of etiquette Do’s and Don’ts when dining at a restaurant:

1. Seating: Choose a comfortable table location. Nice locations include next to a window or near an attractive view such as a lovely wall picture. Make sure you are not seated in a high traffic area as this will be a constant distraction

2. Don’t treat the wait staff poorly. They are there to fulfill all of your dining needs. As well, this is how they are earning an income so being rude or obnoxious makes their job unpleasant and stressful. If your server makes a mistake with your order, or your food is not cooked properly, don’t yell at the server. Be courteous and kind when sending food back.

3. Use good manners when you are eating. For instance, chew with your mouth closed and don’t put too much food in your mouth. Don’t use bread for dipping in soups or soaking up sauces. Don’t make loud noises when eating. Don’t talk with a full mouth. Don’t put your elbows on the table. Use utensils when eating. Eat at the same speed as your guests. Don’t pick your teeth or lick your fingers at the table. Don’t cut your food in pieces that are too big. You don’t want to sit there chewing on a big chunk of meat, especially if you are on a date.

What you need:

1 1/2 pounds Courgette (washed)
4 tablespoon Olive oil
1/4 teaspoon Hot red pepper

Salt
4 tablespoon Italian parsley (chopped)

Dressing for Salad:

1 tablespoon Vinegar
3 tablespoon Olive oil

Description:

Clean the courgette and slice them into 1/4 inches thick.

Put the slices of courgette on a casserole.

Mix it with 2/3 cup of water, 4 tablespoon of Olive Oil, 1/4 teaspoon hot pepper, 1/4 teaspoon Black pepper and 1/4 teaspoon cumin.

Seasoned with salt.

Heat for five minutes or just until it is crispy.

Refrigerate and keep cold.

Drain the courgette when serving.

Create the dressing by mixing the vinegar and olive oil. Seasoned it with salt and pepper.

Add the dressing to the courgette, mix them well and serve it with parsley as garnish.

Serve immediately.
